Ingredients
3 large chicken breasts, halved and pressed
3 medium eggs
1 tbsp garlic paste or minced
2 tbsp parsley, finely chopped
Salt and pepper to taste
1 tbsp "Hanouna's Taste - Mchermel"
1 cup panko breadcrumbs
1/2 cup plain breadcrumbs
1/2 cup parmesan cheese, freshly grated
1 tbsp "Hanouna's Taste - Mchermel"
Salt and pepper to taste
Oil for frying
1 1/2 tbsp olive oil
1 large onion, finely chopped
2 tsp garlic paste or minced
400g tomato puree
1 tbsp "Hanouna's Taste - Mchermel"
Salt and pepper to taste
1 tsp dried oregano
1 tsp sugar
2-3 fresh basil leaves
250g mozzarella cheese, sliced
1/3 cup parmesan cheese, freshly grated
Fresh chopped basil

For the Chicken
Whisk together eggs, garlic, parsley, spices, salt and pepper in a large dish. Add the chicken into the eggs. Cover with plastic wrap and allow to marinate for at least 15 minutes.
When the chicken is ready for cooking, mix breadcrumbs, parmesan cheese, spices, salt and pepper together in a separate dish. Dip chicken into the breadcrumbs mixture to evenly coat
Heat oil in a large skillet over medium-high heat until hot. Fry the chicken until golden and crispy
Place the chicken in a rack and reserve in preheated oven (220C)
For the sauce
Heat olive oil in a medium pot. Fry the onion and garlic until transparent and fragrant. Add the tomato puree, spices, salt, pepper, sugar, oregano and fresh basil. Cover with lid to simmer for about 8-10 minutes. Taste and adjust the seasoning
Place the fried chicken in baking tray, and top each breast with a bit of sauce, 2-3 slices of mozzarella cheese and parmesan cheese. Sprinkle with chopped basil
Bake for 10 minutes or until cheese is bubbling and melted
